My questions considers the posts that belong to the portfolio category, and I want them as a clear content without the sidebar (that I am using as a default because of the blog posts). Is there any way that I could have some posts without the sidebar?

you can use the portfolio page template, it got no sidebar.
And you can hide posts from the blog and archive like this. Another way is to create a custom post type, like explained here.
Another way of creating a portfolio is by using the bfthumbs shortcode, it can display posts in many different styles, and in the latest version it can also use normal page navigation, like explained here (use the no sidebar page template).
A no sidebar single page can be fixed like this (it will be automatically no sidebar for the portfolio custom post type).
