Hi Vfxdude,
I've moved my problem to here because it was getting lost in the thread mess at Theme Forest.
After taking your tip to make the thumbs at least 255px, I found that didn't work.
I then removed the thumbnail completely to allow Tim Thumb to resize images, that didn't work.
The widget 'include thumbnails' is ticked.

Good question,
I did a fresh install of this theme and I checked the tim thumb cache and there is many files in there.
Then I checked uploading a 255px wide image and setting it as the default image for the post. Once I removed the Thumbnail Image URL (If i leave this in it doesn't work) This worked for me, I guess it means there is a bug with the Thumbnail URL method?

By the way the size of the sidebar image resizing is 264x100
The reason I don't use Tim Thumb and make the thumbnails myself is because many of my images have text on them and resize horribly

Is there anyway to set the width of the thumbs to 300? I noticed there is a thumbnail height but not width, does changing the height change the width?

The width of the page thumbnails (and the sidebar ones) is calculated from the "Feature Image Width", so it that setting is changed the thumbnails width changes. The thumbnails in a post (with sidebar) is calculated from the content width. If the thumbnail size of the sidebar is 264x100 then the images added must be at least 264px wide.
