Is there a way to hide a category name from being displayed? For instance, almost all my posts will be using the "no sidebar" template, and I want to display my categories but I don't want to see "no sidebar" next to my posts each time. I seem to remember reading something about this, but can't remember where.

Don't really get that part : "
but I don't want to see "no sidebar" next to my posts
"
But if you're looking for a way to hide categories from being displayed in the navigation and in the category selector, you may wanna use ACE : http://wordpress.org/extend/plugins/advanced-category-excluder/Posted 1 year ago # -
The problem with that plugin is that it hides the post as well, unless I'm reading that incorrectly.
I'm using the custom single hack to make my posts exclude the sidebar, by adding the code to a category named "no sidebar". I want to display the categories in the meta information for each post, but I don't want to see the words "no sidebar" displayed along with the rest of the category info. I don't want to hide the posts themselves, I just want to hide the name of that category from appearing in the metadata seen on the site.
