How can I customise the Items that will go into the navigation bar (eg: instead of 'photoblog' I may want 'photo tips') I'm new to this so please forgive my ignorance!

adminwhen using the navigation admin in the theme settings you can change the name of the page (or category/link), and it will also change in the navigation.
If you are using the wordpress 3.0 menu admin (choose the "Use the WP3 Menu Admin instead of this one" theme setting to enable it) you can change the label shown in the navigation independent of the page name.
